SLATER COOKBOOK: APPLE CRISP CUPS (YUM!)

Thanksgiving is the one time a year where you can skip your calorie counting and not feel guilty about it. However, wouldn’t it be nice to have a delicious desert that is low in calories? Because, although you might not care about it that day, your body certainly will.

Apple Crisp Cups are easy to make and a family favorite treat. With only 109.1 calories per serving, you’ll be glad you decided to stick with these. 

Prep time: 45 minutes 

Cooking time: 20 minutes 

Servings: 48

Yield: 4 dozen apple crisp cups

Ingredients:

  • 3 large Mackintosh apples- peeled, cored, and chopped
  • ¼ cup water
  • 2 tablespoons white sugar 
  • 1 teaspoon ground cinnamon 
  • 2 cups all-purpose flower 
  • 2 cups rolled oats
  • 1 ½ brown sugar 
  • ½ teaspoon ground cinnamon
  • 1 ½ cups butter 

Directions:

  1. Preheat the oven to 350 degrees. Grease the 4 12-cup mini-cupcake tins
  2. Mix the apples, water, white sugar, and ½ teaspoon of cinnamon together in a saucepan, and simmer it over a medium-low heat, stirring occasionally. Simmer for about 5 minutes 
  3. Combine flour, oats, brown sugar, 2 teaspoons of cinnamon, and nutmeg in a large bowl. Cut the butter into the flower mixture and mix until the mixture looks like coarse crumbs. 
  4. Place a teaspoon of the crust mixture into a mini-cupcake cup, and press into it the cup so that it covers the bottom and pushed up the sides of the cup.
  5. Place about 2 teaspoons of apple filling into the crust.
  6. Sprinkle the left over mixture on the filling
  7. Bake in the over until golden brown, 15 to 20 minutes.
